Ingredients

  • 16 ozs kidney beans (rinsed and drained)
  • 15 ozs garbanzo(chickpeas) beans (rinsed and drained)
  • 15 ozs black beans (rinsed and drained)
  • 10 ozs corn (frozen,thawed)
  • 1/2 cup fresh cilantro or parsley (minced)
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup green pepper (chopped)
  • 1/4 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup Jalapeno White Balsamic
  • 1/4 cup EVOO (light to medium intensity)
  • 1 tsp chili powder
  • 1/2 tsp sugar
  • You may add jalapeno pepper (chopped) if desired for added heat.

Instructions

  1. In a large bowl, combine beans, corn, cilantro or parsley, peppers, onion, garlic, and jalapeno if desired.
  2. In a small bowl, whisk the vinegar, EVOO, chili powder, and sugar.
  3. Pour over bean mixture and toss to coat.
  4. Cover and refrigerate overnight.
  5. Makes 12 servings.
