• 10 oz. of spinach (If you use frozen, just be sure it is thawed and well-drained)
  • 1 small onion, chopped
  • 1 package stuffing mix
  • 3 eggs, beaten
  • ¼ cup Wild Mushroom & Sage Olive Oil
  • ¼ cup Parmesan cheese
  • Salt and pepper, to taste

Directions:

Mix all ingredients until well combined. Form into 1” balls and place on greased cooking sheet. Bake at 350 degrees for 20 minutes.

Note: This recipe is easily doubles and the spinach balls may be frozen baked or unbaked. For pre-baked balls, remove from freezer about ½ hour before reheating. Reheat at 350 degrees for 10 minutes. For unbaked balls, remove from freezer 30 minutes before cooking and bake as directed.
