• 1½ pounds Yukon Gold potatoes
  • 8 soft boiled eggs (soft – there is no mayo)
  • 1 cup diced bread and butter jalapeno peppers w/juice
  • 1 cup diced celery
  • 1 cup diced green pepper
  • 1 cup diced scallions
  • ½ to 1 cup Sicilian Lemon Balsamic Vinegar
  • Salt and freshly ground black pepper to taste


Combine ingredients in a bowl and mix so soft eggs coat. Slowly add ½ up to 1 cup  Sicilian Lemon Balsamic Vinegar. Finish with a drizzle of your favorite King’s Olive Oil Co. EVOO. Sprinkle with salt and freshly ground black pepper to taste.
