Ingredients
- 16 ozs kidney beans (rinsed and drained)
- 15 ozs garbanzo(chickpeas) beans (rinsed and drained)
- 15 ozs black beans (rinsed and drained)
- 10 ozs corn (frozen,thawed)
- 1/2 cup fresh cilantro or parsley (minced)
- 1/2 cup red bell pepper (chopped)
- 1/2 cup green pepper (chopped)
- 1/4 cup onion (chopped)
- 2 cloves garlic (minced)
- 1/2 cup Jalapeno White Balsamic
- 1/4 cup EVOO (light to medium intensity)
- 1 tsp chili powder
- 1/2 tsp sugar
- You may add jalapeno pepper (chopped) if desired for added heat.
Instructions
- In a large bowl, combine beans, corn, cilantro or parsley, peppers, onion, garlic, and jalapeno if desired.
- In a small bowl, whisk the vinegar, EVOO, chili powder, and sugar.
- Pour over bean mixture and toss to coat.
- Cover and refrigerate overnight.
- Makes 12 servings.
