Energy Bites with Oatmeal and Coconut


  • 1/3 cup Blood Orange Fused Olive Oil
  • 1/3 cup honey
  • 2 teaspoons vanilla extract
  • 1 cup peanut butter
  • 2 cups dry oatmeal
  • 1 1/3 cups shredded coconut, unsweetened
  • ½ cup ground flaxseed

In a medium bowl whisk together the blood orange EVOO, peanut butter, honey, and vanilla extract until well combined.  Fold in the oats, coconut and ground flax seed until well combined and chill in the fridge for about 1 hour.  Once chilled, press them into balls of desired size.  We made these just under the size of a ping-pong ball but smaller bite-sized pieces also work well.  You can store these in an airtight container for up to a week. Enjoy!
