Orange Maple Glazed Sweet Potatoes


  • 4 large sweet potatoes, peeled and diced
  • 2 tablespoons Blood Orange EVOO
  • 1 tablespoon kosher salt
  • freshly ground black pepper, to taste
  • juice of 1 large orange, zest reserved
  • 2 tablespoons brown sugar
  • 1 tablespoon maple syrup or Vermont Maple Dark Balsamic


  1. Preheat oven to 450F
  2. Place potatoes on large baking sheet, drizzle with olive oil and season with salt and pepper.
  3. Bake for 30 minutes, stirring once
  4. Mix orange juice, sugar, syrup in a small bowl and drizzle over potatoes.
  5. Return to oven for another 10 minutes.
  6. Remove to serving dish and garnish with fresh orange zest
