Roasted Carrots with Chevere and Honey

  • 4 Tablespoons Herbs de Provence
  • 12 medium carrots, peeled and cut in half lengthwise
  • 4 Teaspoons smoked or regular honey, divided
  • 1/4 teaspoon salt
  • 3 Tablespoons crumbled Chevere

Preheat oven to 450 degrees.  Toss olive oil, carrots, 1 teaspoon honey and salt in a large bowl.  Spread in one layer on a baking sheet.  Roast 15 minutes or until carmelized.  Let cool slightly.  Top with Chevere and remaining honey.
