Roasted Potatoes and Peppers


  • 2 lbs small potatoes, cubed
  • 1 Green bell pepper, chopped
  • 1 Red bell pepper, chopped
  • 1/4 cup Rosemary Olive Oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Preheat oven to 400 degrees.  Place potatoes and pepper in a large bowl.  Add Rosemary Olive Oil, salt and pepper and toss, well.  Transfer to parchment paper lined baking sheet.  Roast for 20-25 minutes, or until fork tender.  Serve hot!  Enjoy
